Instructions for Instant Pot Beef Stew

Set your Instant Pot to the saute function.

Add the oil to the pan. Add onions, carrots, and celery. Saute for about 3 minutes or until onions are translucent. Add minced garlic and beef cubes and stir for another 2-3 minutes. Season with salt and pepper, then mix in flour to coat all the ingredients evenly. Now you’re ready for the next step! Add tomatoes, beef stock, beer (if using), Worcestershire sauce, bay leaves, thyme springs and parsley sprigs. Place a lid on your Instant Pot and set it to manual high pressure for 30 minutes (see note below). When finished, take off the lid and do a quick pressure release. Open the lid and stir in the rice, peas and corn. Season with salt and pepper to taste. Serve immediately or allow to cool slightly before transferring your beef stew into containers for storage in the refrigerator or freezer for later use.

To Make Instant Pot Best Beef Stew:

Set your Instant Pot to saute mode and heat 1/2 tablespoon of oil over medium-high heat. Add onions, carrots, and celery; cook until softened, about 3 minutes; add minced garlic; cook until fragrant, about 1 minute more. 

1 tablespoon butter
1 pound beef chuck, cut into 1-inch cubes
4 Yukon Gold potatoes, cubed
1 ½ cups mushrooms, halved
1 onion, cut into 6 wedges
2 carrots, cut into 1/2-inch thick slices
2 cloves garlic, minced
3 cups beef broth
1 tablespoon Worcestershire sauce
1 tablespoon tomato paste
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon dried rosemary

Step 1   Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Melt butter and cook beef chuck cubes in batches until browned on all sides, about 5 minutes per batch.
 Step 2 Return all beef chuck to the pot. Add potatoes, mushrooms, onion, carrots, and garlic; cover with beef broth. Stir in Worcestershire sauce, tomato paste, salt, pepper, and rosemary. Close and lock the lid. Select Meat/Stew function according to manufacturer's instructions; set timer for 35 minutes. Allow 10 to 15 minutes for pressure to build.
Step 3 Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.
