Perfect Spaghetti with Prawns and Garlic


- 250 g of spaghetti (or fettuccine).

- 500 g of peeled medium shrimp.

- Freshly ground black pepper.

- 8 tablespoons of unsalted butter.

- 4 chopped garlic cloves.

- ½ teaspoon of dried oregano.

- ½ teaspoon of crushed red pepper.

- 1 half of arugula.

- 30 g of parmesan.

- 2 tablespoons of fresh parsley leaves.


1. In a large pot of boiling salted water, cook your spaghetti according to the instructions on your bag. Drain them.

2. Season your shrimp with salt and pepper to taste.

3. Melt 2 tablespoons of butter in a large skillet over medium heat. Add the garlic, oregano and chili. Leave to cook, stirring regularly, for 1-2 minutes.

4. Add the shrimp and continue to cook, stirring occasionally, until they turn a pink color. Put it all aside.

5. Melt the rest of the butter (6 tbsp) in the pan. Stir in the pasta, arugula (which should gradually wilt) and Parmesan. Add the shrimp.

6. Add a little parsley and serve immediately.
