Lime marinated shrimp and zucchini spaghetti

 You don't have to spend hours in the kitchen to get a delicious dish. The proof is in the pudding with these marinated shrimp that make it possible to have a healthy and tasty meal quickly, even for a weekday dinner.

Lime marinated  shrimp and zucchini spaghetti

10 large prawns
3 medium-sized zucchini
2 pinches of Espelette pepper
1/2 glass of vegetable broth
1 teaspoon of honey
1.5 lime
10 sprigs of fresh cilantro
olive oil
salt pepper

Shell the shrimp.
In a bowl, combine 2 tablespoons of olive oil, 2 pinches of Espelette pepper, 5 sprigs of chopped coriander (leaves and stems), honey, lime juice and zest. , mix and marinate for 20 minutes.
Make the zucchini spaghetti.
Chop the remaining cilantro leaves.
Separate the shrimp and the sauce.In a large pan, add a drizzle of olive oil. Cook the shrimp on both sides quickly.
Add the marinade and half a glass of vegetable stock to the pan, add the zucchini spaghetti and cook for 3 minutes. They should stay firm (they will be soft if you overcook them).
Place the zucchini spaghetti in a dish. Top with shrimp and chopped cilantro and serve immediately.
