The Best Broiled Paprika and Lemon-Pepper Chicken Breasts


We love baked chicken dishes because they are an easy weeknight dinner that everyone in the family will eat without complaining about being hungry an hour later. We also love them because they reheat well for lunch or an afternoon snack or light dinner. We’ve been experimenting with other ways to add flavor and spice to our favorite recipe so it wasn’t so boring... and we came up with this excellent chicken dish!


Prep Time: 20 minutes Total Time: 50 minutes Yield: 4 - 6 servings


Ingredients: 

4 boneless, skinless chicken breasts, pounded 

1/2 inch thick 

4 tbsp. olive oil 

1/4 cup lemon juice 

1/2 tsp. black pepper zest from one whole lemon 

3 cloves of garlic, minced 

2 tsp. paprika 

1 tsp. salt


Directions:
Begin by combining your paprika and salt in a small bowl. Then set out a plate for your breaded chicken breasts and another plate to hold the seasoned breading once you’re done with the last step. Whisk together the lemon juice, garlic, salt, pepper and paprika in a small bowl. Pour your oil into a large frying pan over medium-high heat. Dip each breast in the lemon juice mixture and then into your breading mixture. Cook each side for two to four minutes until golden brown. Plate and serve immediately with roasted vegetables or potatoes.
