Bionicos (Mexican Fruit Bowls) Recipe

 These are the most delicious fruit bowls ever because they are simple, quick to make, healthy, vegan, and can be made with any type of fruits or vegetables you have on hand. They come together quickly and easily in minutes for a light breakfast or an easy meal served with crusty bread. I make mine in individual ramekins that I love for their practicality-they can go straight from the counter into the oven! Best of all these dishes are just as beautiful as they are delicious.



1 can of pineapple chunks
8 oz watermelon, cut into small chunks or balls
2 oranges, peeled and cut into small chunks or balls
8 oz crushed pineapple (in juice)     1 teaspoon lime juice.
1 teaspoon olive oil for greasing the pan.


Grease an oven-safe dish with some olive oil on the bottom. Place your mixed fruits in your baking pan and make sure all of them are centered equally within the dish.

Top the fruit in the pan with your crushed pineapple. Then, in a separate bowl, mix in your lime juice with 1 teaspoon of olive oil. Mix well and pour over the fruit in your baking dish.

Bake at 375 degrees Fahrenheit for 10 minutes. Remove from oven and let cool for 20 minutes before serving. Enjoy!
Note: This dish goes great with vanilla ice cream or cold whip! I always enjoy eating it cold right out of the fridge when I'm craving something sweet!
