Udoli Dolma Recipe

 But what is dolma? It is a recipe found in Mediterranean, Balkan, Middle Eastern and Maghreb cuisine. It is a dish based on stuffed vine leaves. Sometimes zucchini, tomatoes, peppers or cabbage are used. It is based on rice, sometimes minced meat, onions and spices. In our recipe, we use zucchini and minced meat. Let's go to the preparation of dolma!

Udoli Dolma Recipe

350g minced meat
4 zucchini not too large
4 medium potatoes
1 onion
1 handful of precooked chickpeas
2 tbsp. rice
Parsley or chopped cilantro
½ to 1 tsp. 1/2 teaspoon ground cinnamon (to taste)
1 C. 1/4 teaspoon paprika or sweet pepper
Salt and pepper

1. Finely slice the onion.
2. Peel the zucchini every second strip as well as the potatoes, then rinse them.

3. Cut the zucchini into two sections with a sharp knife and remove the core.

4. Also dig the inside of the potatoes to extract some of them and set them aside.

5. Mix the minced meat with 1 to 2 tablespoons of the minced onion, salt, pepper, rice, chopped grass, paprika.

6. Start stuffing the vegetables with the filling and shape the remaining stuffing into balls.

7. Heat a little olive oil before you sweat the onion in it and place it in the stuffed vegetables.

8. Cover with a little water then add the cinnamon.

9. Salt and pepper and cover and cook for 30 minutes.

10. At the end, check if the vegetables are cooked if not continue for a few more minutes and at the end of cooking, add the chickpeas.

11. The dolma is now ready! A dish soaked in sunshine, the sun of the Mediterranean rim! All you have to do is enjoy yourself.

You can use canned chickpeas.
