Masa's Fried Chicken

This fried chicken is without a doubt one of the most popular national recipes in Japan!

 

Masa's Fried Chicken


 Ingredients
(4 people)
2 Boneless chicken thighs
Sake
1 garlic clove
1.5-2cm approximately of fresh ginger
1 tsp salt
2 cases. of Shôyu (soy sauce)
1 tsp Sesame oil
Potato starch and wheat flour in the proportion of 2: 1


Preparation
Cut the thighs into pieces of large bouché. Put them in the plastic bag.
Grate the garlic and ginger.
Add the sake and shoyu to the chicken pieces, then the garlic and ginger. Massage well together.
Let it sit in the fridge for at least an hour.
Prepare the mixture of starch and flour in a deep plate.
Wipe off excess liquid from the marinated chicken one at a time with a paper towel, then roll it in the flour mixture.
Before frying, loosen the excess flour. Fried in the 170 ℃ oil bath until they become lightly colored and drain them on the grill.
Heat the oil to 200 ℃ and return the pre-fried chicken pieces to make them crispy.
Serve also early with a lemon wedge.
