Spinach salad with chicken, strawberries, pecans and goat cheese

This recipe for Strawberry Balsamic Chicken Salad can be used as a meal or as an appetizer. This is a quick and healthy meal that doesn't require a lot of ingredients. Try making it at home for a nice weekend evening.

 

 

Spinach salad with chicken, strawberries, pecans and goat cheese


Ingredients
Servings: 8
2 large boneless chicken breasts, diced
2 tbsp. tablespoon olive oil
2 tbsp. balsamic vinaigrette
1 bunch of fresh spinach, rinsed and drained
2 cups of fresh strawberries, sliced
1 cup crumbled goat cheese
1 cup of sweet pecans
2 tbsp. tablespoon olive oil
2 tbsp. balsamic vinaigrette

Place the chicken in a pan with 2 tbsp. tablespoon olive oil and 2 tbsp. of the dressing. Cook over medium heat until chicken loses its pinkish color in the center, about 10 minutes. Remove from the pan and set aside.
Place the spinach in a large bowl. Garnish with the strawberries, cheese and pecans. Drizzle with 2 Tbsp. tablespoon olive oil and 2 tbsp. of the dressing. Place warm or cold chicken on top. To serve.
