How To Make Chicken Broccoli Rice Casserole

How To Make Chicken Broccoli Rice Casserole

 


Instructions
Preheat oven to 350° F. Spray an 8×8-inch pan with nonstick spray.
Place the cooked rice in the bottom of the pan. Then place the chopped broccoli on top of the rice. Set aside.
Melt 4 tablespoons of butter in a pan over low heat. Slowly beat in the flour and mix until smooth. Then slowly beat in the chicken stock. Add Italian seasoning. Stir until slightly thickened (about 2 minutes). Then mix in sour cream and 1/2 cup of cheese. Beat until smooth. Add salt and pepper to taste.
Add shredded chicken to cream mixture and pour over broccoli. Sprinkle remaining cheese on top. Mix the ritz crumbs with the remaining butter and sprinkle over the top.
Cook the broccoli chicken casserole uncovered for 30 minutes or until bubbling. Let stand 5 minutes before serving.
Notes
Note: If you don't want to make your own cream sauce, you can skip the 4 tablespoons of butter, flour, chicken broth and Italian seasoning. Instead, mix: 1 can (10 ounces) cream of chicken with 1/2 cup sour cream and cheese. Then season with salt and pepper to taste.


Instructions
Prepare the broccoli casserole on an oven and freezer safe plate. I like aluminum freezer trays.
Prepare the recipe right up to the point of baking. Then, instead of baking, you'll cover the tray with foil, then slip it into a freezer bag or wrap it in plastic wrap or foil. Make sure the pan is stored in a flat, level place in the freezer.
To thaw, place in the refrigerator overnight before serving.
Once you are ready to bake, remove the foil and bake at 350° F until heated through (about 30 minutes). If the Ritz crumb topping starts to burn, feel free to cover it with foil while you reheat it.
