Buckwheat, Yogurt and Parsley Burgers

These super healthy veggie burgers are very tasty and easy to prepare. The creamy texture of the parsley yogurt blends perfectly with the nutty flavour of the buckwheat.

Buckwheat, yogurt and parsley burgers
100g buckwheat
180g red beans, rinsed and drained
1 green chilli
1 lemon
40g peanuts
½ bunch of fresh coriander
80g red cabbage
2 tbsp. garam masala
1 ½ tsp. cumin
30g almond flour
10 c. olive oil
Parsley yogurt:
200g plain yogurt
1 bunch of parsley

Kidney beans are an excellent source of protein, which is essential for healthy hair, nails and skin. Their high fiber content also helps in the proper functioning of the digestive system and prevents constipation.


Of buckwheat, yogurt and parsley burgers

1. Preheat the oven to 180 ° C (350 ° F). In a saucepan containing 200 ml of water, add the buckwheat and bring to a boil. Reduce the heat and simmer for 15 to 20 minutes. Drain and place in a large bowl. Coarsely mash the kidney beans with a fork and add them to the buckwheat.

2. Finely mince the green pepper and cilantro, and add them to the preparation, along with the peanuts. Using a peeler, peel the lemon rind, cut it into thin strips and thinly slice it.

3. Cut the cabbage into thin strips and add it to the preparation, along with the sliced ​​lemon. Add the spices, then the egg. Mix everything together and add the almond flour.

4. By taking 2 tbsp. of the mixture at a time, shape into small, flat balls with your hands and place them on a baking sheet covered with parchment paper. Pour 1 tbsp. drizzle olive oil over meatballs and bake for about 25 minutes on the center rack. Put them back on the upper rack of the oven for the last 5 minutes.

5. Combine the yogurt and finely chopped parsley, and season with salt to taste. Cut the rolls in half, spread them with yogurt and top with the buckwheat burgers and lettuce. Add more lemon zest if desired.
