Ricardo's Banana and Walnut Bread

 I'm certainly not reinventing the wheel by offering you this morning a banana bread, but it's always fun to try new versions eh?! This one from Ricardo is really good. It is as soft as you could wish, the cooking time is just right and the taste is well balanced. The addition of walnuts is up to you, it's not mandatory, but if you're a fan like me, go ahead, it's even better! I always buy my nuts in bulk at Super C, they have a great variety and they are quality too. For the recipe, I opted for mega chunks of walnuts, I really wanted to feel them under my teeth.

 

Ricardo's Banana and Walnut Bread

 

 INGREDIENTS
2 cups of pastry flour
2 tbsp. baking powder
1/2 cup unsalted butter, softened
1 cup lightly packed brown sugar
2 eggs, beaten
1 C. pure vanilla extract
1 1/4 cups bananas (about 3), mashed
1/2 cup of milk
1 cup walnuts, chopped


PREPARATIONS

Place the rack in the center of the oven. Preheat the oven to 180 ° C (350 ° F). Butter a 23 x 13-cm (9 x 5-inch) loaf pan.
In a bowl, combine the flour and baking powder. Reserve.
In another bowl, whisk together the butter and brown sugar for about 1 minute, until the mixture turns pale.
Add the eggs and vanilla, then whisk until well combined. Add the mashed bananas and beat with a wooden spoon. Add the dry ingredients and milk, alternately.
Spread the dough in the mold. Bake for about 1 hour or until a toothpick inserted in the center comes out clean.
Let cool before unmoulding and slicing.
