 Here is a small idea for your festive aperitifs, balls of foie gras coated with poppy seeds and imprisoned by pieces of dried apricots... A simple and chic recipe that you can prepare a little in advance.

INGREDIENTS:
  6 PERS.
150 g of foie gras (or a Very good foie gras mousse)
12 dried apricots
4 tbsp. poppy seeds

PREPARATIONS:

1. Divide the dried apricots in half. Cut each part to form squares. Reserve the offcuts for later use in another recipe. Pour the poppy seeds in a cup.
2. Take 12 balls of foie gras using a melon spoon. If necessary, round them between the palms of your hands. Roll them in the poppy seeds to coat them completely. Then assemble your skewers by alternating a piece of dry apricot, a ball of foie gras with poppy seeds and a new piece of dry apricot.
3. You can now reserve them in the refrigerator until they are tasted, remembering to cover them with cling film. When it's time to taste them, present your kebabs as you wish, horizontally or vertically.
