Fried rice (Mauritian rice)

Here is our recipe for fried rice, a tasty dish, complete and easy to cook,. healthy and fast and takes only a few ingredients
 

Fried rice (Mauritian rice)

 

 Ingredients
400g raw basmati rice
300 g of chicken breast
150 g peeled shrimp
1 carrot (approx. 60 g)
60g frozen peas (or fresh if you have some)
5 eggs
1 bunch of Thai chives (can be substituted with sprigs of green onion or regular chives)
20g light soy sauce
20g dark soy sauce
15 g oyster sauce
10 g of water
100 g of sunflower oil
1 teaspoon of ground black pepper
1 teaspoon of salt


Preparations
Put the rice to cook.
Combine the light soy sauce, dark soy sauce and oyster sauce with the water. Reserve.
Cut the chicken breast into small cubes. Marinate them in a little soy sauce / oyster sauce, while you prepare the other ingredients.
Also marinate the shrimp in a little soy sauce / oyster sauce.
Wash, peel and cut the carrot into sticks.
Cut the chives and set aside.
Combine salt and pepper in a small pot and set aside.
Beat the 5 eggs and add a pinch of the salt / pepper mixture. Heat a pan, add a little oil and cook the eggs like an omelet. When the omelet is done, cut into small cubes and set aside.
In the same pan add a little oil and brown the chicken with a pinch of the salt / pepper mixture. Reserve
Do the same with the shrimp, then set aside.
Still in the same pan, add a little oil then brown the peas, adding a little salt / pepper mixture and set aside
Do the same with the carrot pieces, then set aside.
Once the rice is cooked, proceed to assembling the dish. In the hot pan, put a little oil then add a big spoon of rice, a big spoon of each ingredients to prepare and reserve (chicken, shrimps, carrots, peas, eggs and chives), a pinch of the mixture and pepper and a little of the soy sauce / oyster sauce mixture. Mix and brown for a few moments. Pour into a large container.
Repeat the operation until all the ingredients are used up, being careful to stir well with each new portion added to the container, in order to obtain a uniform seasoning throughout the dish.
Serve with a sweet apple chatini or garlic sauce.
