Apple and zucchini velouté with soft goat cheese

 Apple and zucchini velouté with soft goat cheese for young and old and even for people who are on a diet. My children love it especially if it is accompanied by vegetable spring rolls.


Apple and zucchini velouté with soft goat cheese


INGREDIENTS:

 4 PERS.

1 apple

3 zucchini

20 g of soft goat cheese

1 onion

1 vegetable stock cube

1 C. chopped parsley

PREPARATION

1. Peel the apple and zucchini, then cut them into pieces.

2  Peel the onion and slice it.

3.Bring 1 liter of water to the boil, dilute the broth and add the zucchini, apple and onion.

4. Leave to cook for 10 minutes.

5. Add the cheese, then mix.

6. Mix finely, sprinkle with parsley and serve immediately.
